Microwave Farmer's Breakfast Casserole



1/2 lb of Bacon
3 cups of Frozen Potatoes O'Brien
2 Tablespoons of butter
3 Eggs
1 Tablespoon of milk
Dash of pepper
Dash of basil
1 cup of Cheese

Precook bacon (see Bacon in the oven)  until crispy, cool and crumble.  In a 1 Quart microwave safe dish, cook Potatoes O'Brien and butter in the microwave for 5 minutes.  Beat eggs, milk, pepper and basil. Add Egg mixture, cheese and crumbled bacon to Potatoes O'Brien.  Stir and cook on high for 3 minutes.  Stir and cook a remaining 3 minutes or until eggs are cooked.  Enjoy.

Options: you can substitute ham or cooked sausage for the bacon.
