Zucchini Bread



Do you have too many zucchinis growing in your garden?  Make bread out of them.  You can also prepare and freeze the zucchini to use later.

Ingredients:
3 eggs
1 cup of oil
1 1/2 cups of sugar
2 cups of grated zucchini (or puree in blender)
2 teaspoons of vanilla
2 cups of flour
1 teaspoon of baking soda
1/4 teaspoon of baking powder
1 teaspoon of salt
1 teaspoons of Cinnamon
Optional: 1 cup of chopped nuts

Beat eggs until fluffy.  Mix flour and dry ingredients in a separate bowl, except nuts.  Mix all moist ingredients together and add dry ingredients.  Add nuts and mix well.  Pour batter into two greased and floured 5x9 loaf pans or four small pans.  Bake at 350 degrees for 1 hour for two large pans or 30 minutes for 4 small pans.  Make sure the bread is done by testing it with toothpick, until it comes out clean.
