Fried Rice - Shrimp

Fried rice is really easy and inexpensive to make.  I used shrimp tonight, but you can used ham, chicken, or beef. 

1 egg
1/2 of a diced onion
1 Tablespoon of butter
2-3 cups of shrimp or your choice of meat
1 cup of frozen peas and carrots
4 cups of cooked rice
1 Tablespoons of soy sauce

First, spray fry pan or wok pan with cooking spray.
 Scramble egg and place egg to the side in bowl.
 On medium heat, add butter and onion to wok and cook onion until tender.  Add shrimp, peas and carrots.
Cook until peas, carrots and meat are cooked.  Add, cooked rice, egg and soy sauce.  You can add additional soy sauce for extra flavoring.
