Guacamole


Guacamole is so easy to make.  First, when you a select an avocado, select one that is slightly soft, when you squeeze it. If it is hard like a rock, it is not ripe and you will not be able to mash it into guacamole.

First, cut Avocado in half length wise.  Pull apart.  Remove skin by carefully peeling it away, using a spoon to scoop out the avocado, or turn the 1/2 upside down over a bowl and squeezing the outside skin.  If you use the squeeze method, it usually falls out of the skin into the bowl and you are left with the skin in your hand.  Remove the seed in the other half and repeat.  You can put the seed to the side and place it in the guacamole later to keep it fresher.  I usually toss ours, because we never have any leftovers.
Mash the avocado using a potato masher.
Mash the avocado until it is creamy.
Add 1 tablespoon of sour cream and 1 tablespoon of salsa to the avocado.
Mix in the salsa and sour cream and enjoy with chips or your favorite Mexican dish.  You can add additional salsa, if you want a spicier guacamole.

Chocolate Chip Cake



I made this cake for a Bar-B-Que. It is super easy to make and the pudding made it extra moist.
Ingredients:
1 yellow cake mix and ingredients to make the cake on the back of the box. (eggs, water and oil)
1 bag of mini chocolate chips
1 box of instant vanilla pudding (1 cup of milk)
1 can of chocolate icing (or powder sugar)

Preheat oven to 350 degrees.  Spray 9x13 pan with non-stick cooking spray.  Mix yellow cake mix and ingredients to make the cake on the back of the box.  Mix for 2 minutes on medium low.  Next, add box of pudding and 1 cup of milk.  Mix on low speed until pudding and milk are thoroughly mixed in.  Then mix in 1 bag of mini chocolate chips.  Pour cake batter into 9x13 pan.
 Cook for 30-45 minutes.  Test cake with toothpick or cake testers.  Cake is done when the toothpick or cake tester comes out clean, without dough stuck to it.
 After cake cools, frost with the chocolate frosting or sift powder sugar over the cake for a lighter taste.

Oriental Salad



Ingredients:
2 bunches of romaine lettuce, cut up
3 green onions, diced
Layer lettuce and onions in covered bowl and chill for 1 hour in refrigerator

Dressing:
3 Tablespoons of soy sauce
1/3 cup of sugar
1/3 cup of white vinegar
3/4 cup of Extra Virgin Olive Oil
Mix dressing ingredients in a separate bowl and refrigerate for 1 hour

Crush ramen noodels and toss the remaining ingredients in with lettuce, onions and salad dressing.
2 cups of cooked chicken breasts cut up
3/4 cup of slivered almonds
3/4 cup of unsalted sunflower seeds
1 package of crushed ramen noodles, discard flavor packet

Broccoli Salad



This is a great summer recipe.  Whenever my Mom or I take this to a pot luck, we bring home an empty bowl.


Prepare the following salad items and place in a bowl.
1 bunch of broccoli - chopped into small pieces.
1 red onion chopped into small pieces
8 oz of finely shredded mozzarella cheese
1/2 lb of bacon, cooked crisp and broke into pieces
1/4 cup of sunflower seeds, no shells
1/2 cup of raisins

Cream the following items together and pour over salad.
Dressing:
2 Tablespoons of vinegar
1/2 cup of sugar
1 cup of mayo

Chill for 1-2 hours and Enjoy!

Cheesy Sausage and Rice Skillet



I was on the Hillshire farm website and I found this recipe.
Hillshire Farm  Unfortunately, the recipe was a little incomplete.  It was missing the amount of rice to make and it listed the red bell pepper 3 times, so I made it the best that I could.  This is definitely a recipe that we liked and will make again.
1 package of Cheddarwurst sausage
1 red bell pepper, cut into 1/2" strips.
1 green bell pepper, cut into 1/2" strips
1 medium onion, cut into 1/2" strips
4 cups of cooked rice
1 can of condensed broccoli and cheese soup
3/4 cup of milk

Optional: 1 cup of peas, 1 4oz can sliced mushrooms

Prepare 4 cups of rice according to directions on package and keep warm.  Cut sausage into1/2" slices and add to large skillet.  Cook sausage, onions and peppers over medium heat for 5-6 minutes or until sausage is lightly brown and peppers and onions are tender.


Next, add broccoli soup and milk to soup and heat thoroughly.  Spoon, sausage and veggies over rice and Enjoy!
