Learning Letters with Beans




I have done this activity with both of my little learners. It helps them to identify the letter, develop their fine motor skills and prewriting skills.
Materials needed:
paper
liquid glue
dry beans

First, with a large marker write the letter on a piece of paper. I used the other side of a recycled piece of paper.
 Next, make a line of glue on the letter.
 My little learner then placed the dried beans on the line of glue.




 Until she was all done. After the glue was dry, I had my little learner trace the letter with her finger.




Coconut Cake



We just had this cake for Easter dessert and it was delicious. The frosting is made with cool whip which gave it a lighter taste. I saw this recipe in a Jello ad in an All Recipes magazine.  www.jello.com/recipe/classic-angel-flake-coconut-cake

Shopping list:
1 yellow cake mix (2 layer size)
1 7oz package of Angel coconut
1 1/4 cups of milk
1 3.4oz package of coconut flavored instant pudding
1 3.4oz package of vanilla flavored instant pudding
1/4 cup of powdered sugar
1 8oz tub of Cool Whip, thawed

Cake ingredients and instructions:
1 yellow cake mix (2 layer size)
ingredients on cake mix box to make cake
2/3 cup of coconut
1/4 cup of milk
1 3.4oz package of coconut flavored instant pudding

Preheat oven to 350 degree. Prepare cake according to directions on the box for 2-9" round layers. Before pouring the batter into the greased pans, stir in 2/3 cup of coconut, 1/4 cup of milk and the dry coconut pudding mix.
Bake according to directions on cake mix package and test doneness with a toothpick to check.
 Cool in the pans for 10 minutes, before placing them on wire racks to cool completely.

Icing ingredients and instructions:
1 3.4oz package of vanilla flavored instant pudding
1/4 cup of powdered sugar
1 8oz tub of Cool Whip, thawed

Beat dry vanilla pudding mix, powdered sugar and 1/4 cup of milk in a large bowl with a wire whisk for 2 minutes. Stir in Cool Whip and refrigerate for 1 hour.
Place 1 cake layer on plate and place approximately 1 cup of icing on bottom layer. Sprinkle 3/4 cup of coconut on bottom layer.
Place top cake layer on bottom iced layer and frost top and sides with remaining icing. Sprinkle remaining coconut on top and press into sides of cake.
 Refrigerate for 1 hour and Enjoy!

Note: The icing looks white in the photos, but it will have a yellow tint from the vanilla pudding mix.
